I'm not sure why you think email uses UDP - SMTP, POP3 and IMAP all use TCP. As for TCP/IP configuration, that is something of a misnomer - what you put in that dialog is actually plain IP configuration, and TCP has nothing to do with it. However, the use of the term TCP/IP to describe the entire protocol suite is endemic, even if TCP is not used in a particular instance or indeed even if UDP is used in its place.
